Restaurants and the food service industry today account for about five percent of the gross domestic product of the United States. In addition, food service is the second to the largest employer of Americans, with the first being our Federal government. Customers today report that they feel there are a great many more restaurants from which to choose and that they are more satisfied today with the selections they have in foods.
Today there are a lot of changes taking place in the food service industry. Restaurateurs are paying more attention to the wants and needs of the customers. The customers, in turn are expressing a desire for different foods, for a wider range of different cuisines, as well as for foods which are healthier in nature and in some cases, which are vegetarian or vegan in nature.

Money which has been spent on the food service industry continues to grow as the economy slowly recovers, Americans get busier, and more people are eating out rather than at home.
There have been many changes in the restaurant industry but the most notable is that more people are spending money at food service places than they are actually eating meals at home today. The difference is that most people are ordering takeout meals and taking them home to eat as a family. This means that culinary college and other establishments today are offering more information about packing take out foods and how to serve a food that travels well as well as being healthy and nourishing for people who are taking part in these trends.
There has been a very rapid rise in the use of convenience foods in the past four years alone, yet people are also seeking out foods which are healthy. Convenience foods, fast foods, must also be healthy foods today to appeal to the widest range of the American public. They want foods which are higher in quality, are higher in nutrients and more healthy, but which are rapid to cook and have a short transition time from cooking or ordering to the dinner table so that meals require little to no preparation.
Latin American, Spanish, and Asian cuisine seem to be the “in trends” and healthy food is in, while high fat foods and high cholesterol foods are definitely out. While some Americans order them once in a while, as a treat food, the vast majority of those who are eating out or ordering take out foods are ordering items which are more heart healthy. For this reason, even colleges of cooking are changing, as well as the food service industry. They are offering entire courses in culinary college for those who want to cook healthier, smarter foods to please the public and appeal to this new trend in eating.
